Stuffed Bell Peppers a la Cedric
Ingredients
- 3 bell peppers
- 1 pound lean ground turkey (or meatless grounds)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- 1/4 teaspoon kosher or sea salt
- 3/4 cup salsa (no sugar added)
- 1 cup cheddar cheese reduced-fat, grated
Instructions
- Preheat oven to 375 degrees.
- Slice each bell pepper into vertical pieces from the top down. Remove seeds, core, and membrane from bell peppers. Set aside.
- Cook ground turkey (or meat substitute) over medium-high heat, breaking up as it cooks. Drain.
- Stir salsa and spices into cooked turkey or meatless grounds.
- Spoon mixture into bell pepper boats and top with grated cheese.
- Bake on a parchment-lined baking sheet for 10 minutes or until cheese is melted and peppers are hot.
- Serve with optional toppings: sliced Jalapeno peppers, diced avocado, fat-free Greek yogurt or sour cream, sliced green onions.
