About Video Bebop

Where have all the music videos gone? For years they've been relegated to YouTube and Vimeo links. But now, thanks to Seattle's Video Bebop, they have a home on your television set.

Twins Eva and Cedric Walker take us through five great PNW videos from Vanna Oh!, Your Heart Breaks, Nada Rosa, Von Wildenhaus, and Harrison B. Plus, Cedric shares a recipe for stuffed bell peppers.

Stuffed Bell Peppers a la Cedric

Ingredients 

  • 3 bell peppers
  • 1 pound lean ground turkey (or meatless grounds)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon kosher or sea salt
  • 3/4 cup salsa (no sugar added)
  • 1 cup cheddar cheese reduced-fat, grated

  Instructions

  • Preheat oven to 375 degrees.
  • Slice each bell pepper into vertical pieces from the top down. Remove seeds, core, and membrane from bell peppers. Set aside.
  • Cook ground turkey (or meat substitute) over medium-high heat, breaking up as it cooks. Drain.
  • Stir salsa and spices into cooked turkey or meatless grounds.
  • Spoon mixture into bell pepper boats and top with grated cheese.
  • Bake on a parchment-lined baking sheet for 10 minutes or until cheese is melted and peppers are hot.
  • Serve with optional toppings: sliced Jalapeno peppers, diced avocado, fat-free Greek yogurt or sour cream, sliced green onions.
