Locals are tapping into the maple syrup market

Most of us have a bottle of maple syrup somewhere in our kitchens. And nearly all that syrup is tapped from maple trees in the Northeast. Now, some Northwest folks want in. And they’re harvesting syrup from a tree that many consider more of a nuisance, the bigleaf maple. Its sugar content is lower than the East Coast’s sugar maple trees, but its syrup-making potential is high, and many people are getting in on this growing movement. See the syrup-making process up close inside a working “sugar shack” in Kitsap County. Producers David Albright and Jenny Cunningham explain.
